Serves 6
1 1/2 tsp ground ginger
1 tsp salt
1/4 tsp Chinese Five Spice Powder
1/8 tsp garlic powder
2 1/2 lbs sweet potatoes
2 TBSP Canola Oil
Chopped Fresh Cilantro and sea salt (optional)
Position rack in upper 1/3 of oven, preheat to 450*F. Coat jellyroll pan with cooking spray
In a large bowl, combine ginger, salt, five spice powder and garlic powder; reserve. Cut each potato
into 6 wedges. Add potatoes and oil to spice mixture; toss until well coated.n Arrange in single layer
on pan.
Roast until potatoes are tneder and browned, about 20 minutes. Coiol slightly. If desired, serve sprinled wit cilantro and sea salt.
