I am putting this with casseroles, because even though it's not really one. you don't need anything but a nice salad with it. I adapted this from a recipe I got from my Daughter - inlaw many years ago.
Ingredients: 1/2 pound of ground chicken 1 can of tomato soup 1 cup of cooked quinoa 1/2 large onion (chopped fine) 1 clove of garlic (minced) salt & pepper to taste Mix all of the above together.
4 medium peppers (one per person) Steam the peppers lightly, then stuff them with the above mixture. Pour a mixture of 1/2 cup of salsa & 1/2 cup of water over them. Bake in a covered casserole for 45 minutes at 350. Sometimes I top them with grated cheese, just before they are done. * 4WW. points per pepper or Core. ** 3 tablespoons of grated cheese is 3 points extra.
