2 16oz cans diced tomatoes in own juice with or without green chiles 1 16oz can red kidney beans 1 16oz can black beans 1/2 C chopped onion 1/2 C chopped celery 1/2 C chopped green bell pepper 1/2 package chili seasoning mix 1/2 package veggie crumbles (I use Gardenburger)
Spray bottom of pot with non stick spray and saute chopped veggies until tender. Add canned ingredients, seasoning mix and veggie crumbles and simmer for 30 minutes to let flavors marry. I like a lot of cumin so I add more to taste. I also like hot chili...Enjoy!!!
