Brownie Pie


3 egg whites                                               2 Tbsp packed brown sugar
18 2 1/2-inch chocolate graham crackers         1/4 cup chopped walnuts
1/2 tsp vanilla extract                                   1 pint vanilla nonfat yogurt


Preheat oven to 325.  Spray a 9" pe plate with nonstick cooking spray.  In a large bowl, with an electric mixer on medium speed, beat egg whites until soft peaks form, 3-4 minutes.  With the mixer at med-high speed, gradually add the sugar and beat until stiff peaks form, 2-3 minutes.  Using a rubber scraper, gently fold in the cracker crumbs, nuts, and vanilla until just blended.  Scrape the mixture into the pie plate.  Bake until firm and a toothpick inserted in the center comes out clean, about 25 minutes.  Cool completely on a rack.  Spread the frozen yogurt over the pie.  Freeze, covered, until the yougurt is very firm, 2-3 hours.


Makes 8 serving @ 2 pts a serving
