These roasted shallots make a sweet accompaniment to chicken or fish. And they can be made a day in advance — simply reheat on the stovetop before serving.
20 medium shallot(s), trimmed and peeled 1 cup fat-free chicken broth 1 piece bay leaf 1 Tbsp thyme, or 2 sprigs 1 Tbsp balsamic vinegar 1/4 tsp table salt 1/4 tsp black pepper
Instructions
1. Preheat oven to 400ºF. Place shallots in a roasting pan. 2. In a bowl, combine broth, bay leaf, thyme, vinegar and salt and pepper. Pour over shallots. Bake for 20 minutes. Remove from oven and baste shallots with pan liquids. 3. Return to oven and bake until shallots are soft, about 20 minutes more. Yields 5 shallots per serving.
