Take advantage of the abundance of strawberries this summer with our frozen fruit mousse. Make sure the berries are at their peak of ripeness for the sweetest, most flavorful dessert.
2 cups strawberries, hulled and halved, frozen 3 cup pineapple, chopped, frozen 1 large banana(s), chopped, frozen 1/2 cup soy cream cheese, also known as tofu cream cheese 1 cup lite whipped topping
Instructions
1. Put strawberries, pineapple and banana into a food processor and pulse until puréed. Add soy cream cheese and purée. Add whipped topping and pulse just until incorporated. 2. Pour into an 8-inch square pan and freeze until firm, about 2 hours. 3. Remove from freezer about 15 minutes before serving and cut into 8 pieces.
