Creamy Baked Spinach Gratin (Core*/1 pt)


*This is another recipe I came up with...I'm making it tonight with grilled steaks, baked sweet potatoes and salad, with WW crustless pumpkin pie for dessert. It really doesn't get much better than that. This traditional steakhouse dish has been renovated and tastes great! Hope you try it! To make this Core, omit parmesan cheese (but it only adds 1/2 pt for the whole dish..I keep it in. Colette

Creamy Baked Spinach Gratin

Ingredients

2~10 ounce packages chopped frozen spinach, thawed and squeezed dry
1/3 cup chopped onion)
2 clove garlic, minced
1 Tbsp fat-free mayonnaise
2 Tbsp fat-free sour cream
1 Tbsp reduced fat parmesan cheese
1/2 cup shredded fat-free cheddar cheese
1/2 cup fat-free evaporated milk
1 TBSP olive oil
salt and pepper to taste
nutmeg* (optional)

Instructions:

Preheat oven to 325*F

In a saute pan, saute onion and garlic until translucent but not browned. Add spinach and cook over medium heat until warmed through. Add evaporated milk, sour cream, mayonaisse, parmesan and cheese. Add salt and pepper to taste. Add nutmeg if desired. Mx well.

Spray a casserole dish with cooking spray. Transfer spinach mixture into baking dish, cover with foil and bake for 25-30 minutes. Serve hot.
