• 1 - 15 ounce can black beans, drained and rinsed • 1/4 cup reduced fat Monterey Jack cheese, shredded • 1/4 cup reduced fat colby cheese, shredded • 1/4 cup green onions, chopped • 1 medium tomato, chopped • 1 teaspoon chili powder • 1/2 teaspoon cumin • 1/3 cup reduced salt tomato sauce • 1 tablespoon lime juice • 4 - 8 inch fat-free flour tortillas • 2 cups shredded lettuce
Combine all ingredients except lettuce and flour tortillas.
Spoon 1/4 of bean mixture evenly down the center of each tortilla. Top each with 1/4 cup of lettuce. Fold Bottom of tortillas up. Then fold sides toward center, overlapping slightly. Secure with tuoothpicks. Serve immediately.
