Grilled buns with minced garlic enhances the flavor.
Servings: 4
• 4 medium skinless (1 pound), boneless chicken breast halves • 1/2 cup bottled fat-free, low-calorie or regular Caesar salad dressing • 2 teaspoons olive oil • 1 clove garlic, minced • 4 whole wheat hamburger buns, split • 4 large leaves romaine lettuce • 1/4 cup finely shredded Parmesan cheese • Freshly ground pepper
Grill chicken on the rack of an uncovered grill directly over medium coals for 12 to 15 minutes or until chicken is tender and no longer pink, turning once and brushing with 1/4 cup of the salad dressing the last 5 minutes of grilling.
Meanwhile, stir together olive oil and garlic. Using a pastry brush, brush oil mixture over cut sides of buns. Toast on grill or face up in broiler
To assemble, place chicken on bun bottoms. Top with romaine, drizzle with the remaining salad dressing, and sprinkle with Parmesan cheese and fresh ground black pepper. Add bun tops and serves immediately.
