Add a salad and you've got a filling lunch, low in calories and fat. WW.com says a serving=1 cup of hominy. If you want to make this Core*, use fat free cheese.
Servings: 4 Cooking Time: 30 minutes
• Vegetable cooking spray • 1/2 cup chopped onion • 1 clove garlic, minced • 1 - 15 oz. can yellow hominy, drained • 1 chopped tomato • 2 tablespoons canned chopped green chilies • 1/2 teaspoon chili powder • 1/8 teaspoon salt • 1/4 teaspoon black pepper • 1/4 cup low fat shredded Cheddar cheese
Spray nonstick skillet with cooking oil spray; place over medium high heat until hot. Add onion and garlic; sauté until tender. Stir in hominy and remaining ingredients except cheese. Spoon mixture into a 1 quart baking dish coated with cooking oil spray. Bake uncovered, at 350°F for 25 minutes. Sprinkle with cheese, and bake 5 minutes.
