Honey Glazed Sweet Potatoes (3 pts)



A delightful addition that is as easy as it is delicious.

• 2 1/4 pounds sweet potatoes, peeled, cut into 1 1/2-inch pieces (about 7 cups)
• 2 tablespoons light margarine
• 3 tablespoons honey
• 1 teaspoon fresh lemon juice

Preheat oven to 350°F. Arrange sweet potatoes in 13 x 9 x 2-inch glass baking dish. Stir butter, honey, and lemon juice in small saucepan over medium heat until margarine melts. Pour margarine mixture over sweet potatoes; toss to coat. Sprinkle generously with salt and pepper. Bake sweet potatoes until tender when pierced with skewer, stirring and turning occasionally, about 50 minutes.

Per Serving: 178 Calories; 2g Fat (11.0% calories from fat); trace Saturated Fat; 2g Protein; 39g Carbohydrate; 4g Dietary Fiber; 0mg Cholesterol; 62mg Sodium. Exchanges: 2 Grain (Starch); 0 Fruit; 1/2 Fat; 1/2 Other Carbohydrates.
