Herb Grilled Zucchini (1 pt/Core)



A great way to use up those fresh from the garden zucchini. This is one of my favorite recipes. We grill out almost every weekend in the summer, and this zucchini is so amazingly good. Also good made with yellow squash!

Servings: 4


• 3 large zucchini cut into ½ inch thick lengthwise slices
• 1 ½ tablespoons olive oil or just enough for brushing*
• 2 tablespoons chopped fresh oregano (or 2 teaspoons dried, crumbled)
• 2 garlic cloves, minced
• 1 teaspoon chopped fresh rosemary or pinch of dried, crumbled
• Salt and fresh ground pepper to taste

Prepare barbecue at medium-high heat or preheat a broiler. Lightly brush zucchini with olive oil. Sprinkle each side of the zucchini slices with oregano, garlic and rosemary. Season zucchini slices with salt (I like to grind sea salt) and and fresh ground pepper. Grill or broil until zucchini is tender, about 4 minutes per side.

*You may also use olive oil cooking spray.

Per Serving: 69 Calories; 5g Fat (63.8% calories from fat); 1g Saturated Fat; 2g Protein; 5g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 5mg Sodium. Exchanges: 0 Grain (Starch); 1 Vegetable; 1 Fat.
