*I found this recipe in one of my cooking magazines. I lightened it up by substituting fat free cream cheese and sour cream and using Spray Parkay on top instead of melted butter. Ingredients
3 pound potato(es) 8 oz fat-free cream cheese 1 cup fat-free sour cream 1/4 cup fat-free skim milk 1 small onion(s) 1 tsp garlic salt 1/2 tsp table salt 1/2 tsp paprika 3 serving Parkay Spray
Instructions
Place the potatoes in a large saucepan and cover with cold water. Bring to a boil. Reduce heat; cover and simmer until tender. Drain; place potatoes in a large mixing bowl. Add the softened cream cheese, sour cream, milk, chopped onion, garlic salt and salt. beat until blended. Transfer to a 2 quart baking dish that has been sprayed with cooking spray. Spray with a few sprays of Spray Parkay and sprinkle with paprika. Cover and bake at 350*F for 30-35 minutes or until heated through.
