*This is a lighter version of one of my own recipes. My family loves this served with my Dog Gone Good Meat Loaf and green beans. 3 pound potato(es) 1 1/4 cup shredded fat-free cheddar cheese 1/2 cup fat-free sour cream 1 tsp garlic salt 1 Tbsp dry minced onion 1/2 tsp table salt 3/4 tsp black pepper 3 serving Parkay Spray 1/2 tsp paprika
Instructions
Peel and cut potatoes into quarters. Place in a large pot and cover with cold water. Bring to a boil, cook until potatoes are tender. Drain, return to hot pot, but remove from heat. Add remaining ingredients except for Spray Parkay, 1/4 cup of the cheese and paprika, and mash potatoes to desired consistancy. Transfer potato mixture into a 2 quart baking dish that has been sprayed with cooking spray. Spray top of potatoes with Spray Parkay and sprinkle with remaining cheese paprika. Spritz the cheese topping with a little cooking spray or more Spray Parkay. Bake for 15-20 minutes, covered, or until heated through.
