*This is so delicous and a great way to serve fish! Even people that don't like fish tend to love this dish. Herbes De Provence is a combonation of different herbes; usually basil, thyme, rosemary, savory, tarragon, fennel and lavendar flowers and marjoram. You can usually find it in larger grocery stores or specialty stores like World Market, or on line. If you can't find it, just use your favorite summery tasting herbs.

Ingredients
3/4 pound raw tilapia 2 serving Parkay Spray 2 medium scallion(s) 1 1/2 tsp herbes de Provence
Instructions
1. Preheat the oven to 375°F. 2. Clean the scallions, using both the white and green parts. Cut them in two pieces, and slice each piece in half lengthwise. 3. Cut two pieces of aluminum foil, large enough to accomodate one fillet each with enough room leftover to fold up. On each sheet of foil, place 1/2 of the tilapia filets, spray with Spray Fat Free Parkay, add salt and pepper to taste and half of the slice scallions. Add about 1/2 teaspoon of water to each packet, sprinkle 1/2 of the herbes de provence on top of each, then fold the foil up and over the filet until you have a loose packet, making sure there's some room inside to steam. Seal all edges. Repeat for the other filet. 4. Put the packets on a baking sheet. If you've folded them correctly they should not leak while they're in the oven. If you're in doubt, put them in a large oven dish instead. Put into oven for 20-25 minutes. 5. It's very difficult to overcook fish this way, so if you're leery of the fish being undercooked, leave it in slightly longer.
