We make this classic favorite a snap by using a prepackaged broccoli, carrot and red cabbage mix available at most supermarkets.
4 cup packaged coleslaw mix (shredded cabbage and carrots), with broccoli 2 large tangerine(s), seedless, peeled and segments divided 9 oz cooked boneless, skinless chicken breast, chopped 1/2 cup radishes, sliced 1/3 cup tangerine juice, freshly squeezed or store bought 2 Tbsp honey mustard 1 small jalapeno pepper(s), seeded and minced 1 Tbsp vegetable oil 1/4 tsp table salt
Instructions
1. Place broccoli slaw, tangerines, chicken and radishes in a large salad bowl; set aside. Combine remaining ingredients and pour over salad; toss to coat. Yields about 2 cups per serving.
