BRAISED CHICKEN WITH WHITE BEANS & BABY SPINACH (4 pts)

BRAISED CHICKEN WITH WHITE BEANS & BABY SPINACH





1 lb. bone-in skinless chicken thighs 


1/2 tsp. dried thyme leaves, crushed


1/8 tsp. ground black pepper


1-1/2 Tbsp. Promise ® Buttery Spread


1 medium sweet onion, finely chopped


3 cloves garlic, finely chopped


1-1/2 cups low fat, reduced sodium chicken broth


1/4 cup dry white wine or water


1 can (16 oz.) cannellini or white kidney beans, rinsed and drained


1 bag (10 oz.) baby spinach leaves, washed 


Season chicken with thyme and pepper. In 12-inch nonstick skillet, melt 1 tablespoonPromise ® Buttery Spread over medium-high heat and brown chicken, turning once, 6 minutes. Remove chicken from skillet; set aside.
 
In same skillet, add remaining 1/2 tablespoon Spread and cook onion, stirring occasionally, 6 minutes or until tender. Add garlic and cook 30 seconds. Add broth and wine and bring to a boil over high heat. Reduce heat to low and return chicken to skillet. Simmer covered 5 minutes. Stir in beans and spinach. Simmer uncovered, stirring occasionally, 5 minutes or until chicken is thoroughly cooked.
