*I came up with this recipe and it's really good. You can make it in the crockpot or the oven, so it's versatile. It's alot of points, but it's a complete meal in one...chicken and veggies. I hope you enjoy it.

Serve over 1 cup of brown rice (4 pts) and with 1/2 cup ff refried beans (2 pts)
Ingredients
2 uncooked boneless, skinless chicken breast halves 1/2 cup corn, black bean salad (found in frozen vegetable section) 1 cup canned tomatoes with green chilies (may use mild RoTel if you like) 1/2 cup salsa (any variety) 1/2 cup onion, diced 6 large olives, sliced 2/3 cup shredded fat-free cheddar cheese
Instructions
For Crockpot:Starting with the chicken, layer ingredients in a crock pot, except for cheese. Cook on low 4-6 hours or until chicken is done. Top with cheese the last 1/2 hour of cooking. Spray cheese with a little cooking spray to help it melt.
For Oven:Preheat oven to 350*F. Follow same proceedure as above only use an 8x8 baking dish. Bake chicken for approximately 35-40 minutes, or until chicken is no longer pink. Add cheese the last 10 minutes of cooking time. Be sure to spray it with cooking spray to help cheese melt.
