*This makes a GREAT meal and is all core if you can find the sugar free BBQ sauce (which we happened to have)
Serves 2
1 chicken breast, cooked and sliced 4-6 cups lettuce Lots o veggies 1/4 avocado (all on my plate, since Roy doesn't like it) 1 serving polenta sliced with mandolin 1/3 cup corn 1/3 cup black beans 1/4 cup or so ff sour cream 2-3 Tbs sf bbq sauce (or regular...add the points) 2-3 Tbsp skim milk
Assemble the lettuce and veggies. Slice the polenta and spritz with Pam and bake or pan fry until crisp (I do broiler/bake/broiler), sprinkle with chili powder and seasoned salt.
Mix together sour cream, bbq sauce, and add a little milk to thin the mixture.
Serve with bed of lettuce, sprinkled with beans and corn, lay chicken slices down, and top with the polenta chips. Add dressing, enjoy!
