I found this easy recipe in a food magazine many, many years ago. It's been a family favorite ever since. You'll be suprised how delicious ground turkey can be...like a mini thanksgiving in one crouquette.

Ingredients
1 pound lean ground turkey 6 serving(s) stove top stuffing mix 1/3 cup Egg Beaters Egg Beaters 1 tsp dried sage 1 tsp kosher salt 1/2 tsp black pepper 1 1/2 cup canned cranberry sauce 4 sprays cooking spray 1 Tbsp orange zest
Instructions
Preheat oven to 350*F. Heat a large ovenproof skillet to medium heat. Spray with cooking spray.
In a large mixing bowl, combine turkey, stuffing mix with seasoning packet, egg beaters, sage, salt and papper. Mix well. form into 6 croquettes or patties. Brown turkey croquettes on all sides until brown. Remove from heat.
Mix up cranberry sauce and orange zest and pour over turkey croquettes. Bake for approximately 20-25 minutes or until no longer pink inside.
Serving= 1 croquette with 1/6 of sauce.
