*I believe this could be made even fewer points with using chicken breast and making your own dumplings using Light Bisquick.
This recipe is not Core, must use WPA.
Makes 4 servings (1 1/2 cups)
4 chicken thighs, skinned 4 chicken drumsticks, skinned 4 cups fat free chicken broth 3 cups water 1/2 cup chopped onion 1/3 cup sliced celery 1/3 sliced carrot 3/4 tsp dried thyme 1/4 tsp salt 1 pkg. (12 oz) frozen dumplings 2 tsp light butter 1/4 tsp ground black pepper
Combine first 9 ingredients in a large Dutch oven. Bring to a boil and partially cover. Reduce heat and simmer 45 minutes or until chicken is done, Transfer chicken and vegetables to a large bowl, using a slotted spoon. Bring broth to a boil. Separate frozen dumplings into strips and break each in half. Add dumplings to broth, one at a time, stirring often to preven sticking. cover, and reduce heat and simmer for 25 minutes. Meanwhile, remove chicken from bones and cut into bite sized pieces. Add chicken, veggies, butter and pepper to dumpings. Stir well to combine. Simmer 10 minutes, covered until dumplings are tender.
