Blueberry Pie (4 pts)

*My husband was very pleased with this lightenend up version of my usual blueberry pie! I left the top crust off and with a couple of spoonfulls of Cool Whip Free..it was just perfect! We like it very lemony, so if you aren't a lemon fan you may certanly cut back on the lemon juice. I hope you enjoy this. Colette

Ingredients

5 cup blueberries
1/4 cup cornstarch
1/2 cup McNeil Nutritionals SPLENDA No Calorie Sweetener
2 Tbsp fresh lemon juice
1 Tbsp lemon zest
3 Tbsp fat-free margarine (Like Fat Free Promise Buttery Spread)
1 item Pillsbury Refrigerated All Ready Pie Crust
8 servings (2 TBSP each) of Cool Whip Free

Instructions

Preheat oven to 375*F. Line pie pan with pie crust and crimp the edges. Combine all remaining ingredients except margerine and Cool Whip...mix well and pour into crust. Dot with margerine. Bake for 1 hour and 15 mintues. Remove from oven and cool completely.

Top with Cool Whip and a few berries for garnish after cooled. Refrigerate unused portion.
