Be sure to use the larger sea scallops. The smaller bay scallops are too small and will fall apart on the skewers.
It is sometimes helpful to use 2 skewers per kebab when grilling delicate meats like seafood.
Serve over greens or rice pilaf. Count extra points for rice.
Ingredients
12 oz scallops ( about 12 sea scallops) 12 medium shrimp 1/4 tsp kosher salt 1/8 tsp black pepper 1/2 tsp lemon pepper 4 sprays cooking spray
Instructions
Soak wooden skewers in water for 30 minutes. Pat scallops and shelled and deveined shrimp dry on paper towels. Skewer the seafood, leaving space between each piece so that it cooks evenly. You may alternate shrimps and scallops or put them on seperate skewers. Spray all sides of seafood with canola oil cooking spray. Sprinkle evenly with seasonings, being sure all sides are covered.
Grill on a hot grill for 2-3 minutes per side, or until shrimp is pink and scallops are cooked through. Do not overcook.
