INGREDIENTS
* 3 large sweet potatoes, peeled and cut into 1-inch cubes (about 6 cups) * 2 tablespoons olive or canola oil * 2 tablespoons brown sugar * 1 teaspoon chili powder * 1/2 teaspoon salt * 1/4 teaspoon cayenne pepper

DIRECTIONS
In a large resealable plastic bag, toss sweet potatoes and oil. Add remaining ingredients; toss to coat. Transfer to a greased 11-in. x 7-in. x 2-in. baking dish. Bake, uncovered, at 400° for 40-45 minutes or until potatoes are tender, stirring every 15 minutes. Yield: 8 servings.
