* Exported from MasterCook * Spaghetti With Smothered Onions Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Pasta 7 Points Per Serving Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 tablespoons extra virgin olive oil 2 large sweet onions -- quartered and cut into thin wedges 2 cloves garlic -- minced 1/2 cup nonfat chicken broth -- low or reduced sodium 1/2 teaspoon dried thyme 1/8 teaspoon pepper 8 ounces spaghetti 1 1/2 cups frozen peas -- thawed 1/2 cup nonfat swiss cheese -- shredded 1/4 cup parsley -- chopped salt and pepper -- to taste In a large skillet, heat olive oil over medium heat. Add onions and garlic and toss to coat with oil. Reduce heat to low, cover, and cook, stirring occasionally, until onions are very tender and a deep golden color, about 20 minutes. Stir in chicken broth, thyme and pepper. Meanwhile, in a large saucepan filled with boiling water, cook pasta, without adding salt or oil, until tender, but still firm, 7 - minutes; drain.
