* Exported from MasterCook * Easy Black Beans and Rice Recipe By : Pillsbury Fast & Healthy J/A'98 - Sue B Serving Size : 4 Preparation Time :0:00 Categories : Sides 7 Points Per Serving Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups brown rice -- uncooked, instant 15 ounces canned black beans -- rinsed and drained 14 1/2 ounces stewed tomatoes -- Mexican style, undrained 2 tablespoons taco seasoning mix -- 40% less sodium In medium saucepan, bring 1 3/4 cups water to a boil. Stir in rice. Reduce heat to low; cover and simmer 10 minutes or until water is absorbed. Meanwhile, in another medium saucepan, combine black beans, tomatoes and taco seasoning mix. Bring to a boil. Cook over medium heat for 5 minutes, stirring occasionally. To serve, spoon bean mixture over rice. If desired, garnish each serving with nonfat sour cream and chopped fresh cilantro.
