1/2 cup fat free buttermilk 2-3 drops tabasco sauce 1/2 c crushed cornflakes 3 tbsp flour 1/4 tsp each salt & pepper 4 tsp canola oil 2 lbs chicken
Preheat oven to 400 degrees. Spray large baking sheet with non-stick spray.
In large shallow bowl combine buttermilk and hot sauce. Combine cornflakes, flour, salt and pepper in another shallow bowl. Dip chicken in buttermilk, then dredge in cornflakes. Place chicken on baking sheet & drizzle with oil.
Bake for 30 minutes, turn pieces over, then bake for an additional 15-20 minutes until chicken is cooked through.
*~* In the original recipe it calls for 2 lbs of chicken "pieces" ... I would assume 2 lbs of boneless skinless chicken breasts would be the same... I suppose you could also cut those breasts up into chicken strips or chicken nuggets ... the whole thing makes 4 servings, so .. *grin* Have fun!*~*
