1 1/2 cup buttermilk baking mix 3/4 cup uncooked old fashioned oats 1/2 cup 2% reduced fat milk 1/4 cup sugar 1 large egg(s), beaten 2 Tbsp orange juice 1/2 Tbsp orange zest 1 1/4 tsp sugar
Instructions
1. Preheat oven to 400ºF. Line a muffin tin with 10 paper muffin liners. 2. Combine all ingredients, except 1 1/4 teaspoons of sugar, in a large bowl; stir until moistened. 3. Spoon 1/4 cup of batter into each prepared muffin cup. Sprinkle each with 1/8 teaspoon of sugar and bake until golden, about 15 minutes.
