Mixed Greens with Vinaigrette (1 pt)

1/2 cup reduced-sodium chicken broth
1 Tbsp balsamic vinegar
2 tsp olive oil
1 tsp Dijon mustard
1 tsp dried oregano
1/4 tsp table salt
1/4 tsp black pepper, freshly ground
6 cup mixed greens

Instructions


1. Whisk together broth, vinegar, oil, mustard, oregano, salt and pepper in a small bowl.
2. Place greens in a medium bowl. Pour dressing over greens; toss to coat. Yields about 1 1/2 cups of mixed greens and 2 1/2 tablespoons of dressing per serving.



Notes

The use of chicken broth as the base for the vinaigrette eliminates the need for a lot of oil and adds a nice, mellow flavor. Add your own personal touch with sherry vinegar and a flavored oil such as garlic- or basil-olive oil.
