This fruity salad, courtesy of the Weight Watchers U.K. Web site, makes a tasty light lunch.
1/4 cup rice, uncooked brown, long-grain 1 tsp table salt 3/4 cup 1% low-fat cottage cheese 1/8 tsp cayenne pepper 1 2/3 cup unsweetened canned pears, drained and chopped 2 bunch watercress, trimmed 4 Tbsp fat-free salad dressing, except italian, French recommended
Instructions
1. Cook rice according to package directions with salt but without added fat; allow to cool. 2. Mix together cottage cheese, cayenne and pears; stir into rice. 3. Arrange watercress on a serving dish and place pear mixture in center; chill for 15 minutes before serving with dressing.
