This dressing is so delicious that you'll want to make extra for later in the week. It'll stay fresh in the refrigerator for up to 7 days.
2 Tbsp Boar's Head Honey Mustard 1 Tbsp basil, chopped, or any other herbs you have on hand 1 Tbsp shallot(s), or onion, chopped 1/2 Tbsp maple syrup 2 tsp red wine vinegar 2 tsp olive oil 1 small garlic clove(s) 1 1/2 pound portobello mushroom(s), stems removed 8 cup mixed baby greens 4 oz feta cheese, crumbled
Instructions
1. Preheat broiler. 2. In a food processor, combine mustard, basil, shallots, maple syrup, vinegar, oil and garlic. 3. Place mushrooms in a baking pan, stem-side up; pour dressing over each. Broil until tender, about 5 to 7 minutes. Remove from oven and slice. 4. Place 2 cups baby greens on each plate. Top with 1 sliced mushroom and 1 oz crumbled feta cheese.
