Fresh vegetables and beans are the highlight of this 'No-Cook' recipe. Serve this dish on a picnic or with grilled chicken or fish.
1 cup green snap beans, fresh, chopped into bite-sized pieces 1/2 cup cooked lima beans, canned or fresh 1/2 cup cooked garbanzo beans, canned or fresh 1 cup green peas, fresh or frozen and thawed 1/2 medium red onion(s), minced 1/4 cup balsamic vinegar 1/2 tsp olive oil 1/2 tsp dry mustard 1/2 tsp dried oregano 1/2 tsp dried basil 1/4 tsp table salt
Instructions
1. Mix beans, peas and onion together in a medium bowl. 2. Combine remaining ingredients together in a cup and toss with bean mixture. Cover and marinate in refrigerator for at least 4 hours or up to overnight. Yields about 3/4 heaping cup per serving.
