From the Cookbook "Lowfat Cooking for Good Health"
Serves 4 (Each serving=1/2 potato)
2 large sweet potatoes 1 egg white 1/2 cup crushed pineapple (packed in juice, juice reserved) 1/4 cup skim milk Paprika Chopped Parsley(optional)
Preheat oven to 400*F. make a 1/4 inch deep slit all the way around potatoes, and prick with a fork. Bake 45 to 60 minutes, until tender. Cool slightly, then cut in half at slit. Scoop out insides and put in a bowl. Mash; add egg white, 4 tablespoons of the reserved juice and enough milk to make a good consistancy for stuffing. Stir in pineapple. Stuff potato skins with mixture; sprinkle with paprika. Bake 15 minutes, or until hot. Sprinkle with chopped parsley if desired.
