Sweet & Sour Red Cabbage (0 pts)


*From the cookbook "Lowfat Cooking for Good Health"

1 medium-size red cabbage, shredded
1-1/2 cups water
2 TBSP apple juice concentrate
2 whole garlic cloves
2 TBSP fresh lemon juice
1 TBSP white vinegar
1/2 tsp ground ginger

Place cabbage in a deep saucepan. Add remaining ingredients and simmer 35 minutes, stirring occasionally, until tender. Remove garlic. Stir hot or cold.

Makes 8 servings
