This method of cooking will become a favorite in you low fat diet plan. Servings: 3
• 2 large potatoes, peeled • Olive oil cooking spray • Salt • Ground black pepper
Preheat oven to 475°F.
Spray nonstick cookie baking sheet (the Baker's Secret kind works great) with olive oil spray. Lay potatoes flat on surface of cookie sheet. Spray potatoes very, very lightly with cooking oil spray. Place in lower third of the oven. Turn when potatoes begin to brown on bottom. Turn again twice until potatoes are a golden brown and appear golden fried. Salt and pepper to taste and serve with catsup or plain as a side dish.
Note: Roasting intensifies natural flavors. This method works great with tomatoes, yellow squash, zucchini and bell peppers. Cooking times will vary for each vegetable. You can add a dash of dried basil or other spices but it is not really necessary. Onions are out of this world cooked this way. The flavors are caramelized when using this method because of the intense heat. Because of this you will need less seasoning.
