• 4 cups raw potatoes, sliced • 1/2 teaspoon dried parsley • 1/2 teaspoon salt • 1 can low fat cream of mushroom soup • 2/3 cup evaporated skim milk • 1/4 cup chopped onion • 1/4 teaspoon black pepper • 1/4 cup reduced fat grated cheddar cheese
Mix all ingredients, except cheese and potatoes, in a bowl. Pour over potatoes in a baking dish that has been sprayed with cooking oil spray. Sprinkled with low fat cheese and bake uncovered for one hour at 350 degrees F.
NOTE: Try other reduced fat cheeses like Swiss for a different flavor.
