4 oz tempeh, chopped 1 sprays olive oil cooking spray, or enough to coat skillet 1/2 medium onion(s), minced 1 cup canned tomato sauce 1/8 tsp table salt, or to taste 1/8 tsp black pepper, or to taste 4 medium mixed-grain hamburger roll(s), toasted
Instructions
1. Steam tempeh until softened, about 8 minutes. Transfer to a bowl and mash well with a fork; set aside. 2. Coat a nonstick skillet with olive oil-flavored cooking spray and set over medium-low heat; add onion and sauté until very tender, about 5 minutes. Stir in tomato sauce and tempeh, and simmer 2 to 3 minutes; season to taste with salt and pepper. Top bottom of each bun with about 1/2 cup of tempeh mixture. Cover with tops and serve.
