*I adapted this recipe from one of my cooking magazines and ran it through the recipe builder on WW.com, so the points are accurate. The casserole itself is completely Core, but Core people should add 2 pts for each reduced fat biscuit. This is really good, a family pleaser and VERY kid friendly! Colette
1 pound 95% lean/5% fat raw ground beef 1 medium onion(s) 14 1/2 oz canned stewed tomatoes 10 oz frozen mixed vegetables 8 oz canned tomato sauce 6 medium lower -fat refrigerated biscuits 1/2 cup shredded fat-free cheddar cheese 2 tsp garlic powder Salt and Pepper to taste
Instructions
In a large skillet, cook ground beef and onion over medium heat until meat is no longer pink, drain any fat. Stir in tomatoes, mixed vegetables and tomato sauce. Transfer to an 11x7x2" baking dish that has been sprayed with cooking spray. Cover and bake at 400*F for 15 minutes.
For Biscuits: Place 6 biscuits on top of casserole and bake for 15-20 minutes or until golden brown. Sprinkle with fat free cheese, spray with fat free spray margerine. Serve
