California Vegetable Cheese Soup (1 pt)


*I added an extra can of stewed tomatoes to beef it up even more. The girl who gave this recipe in class said she uses 2 cans of Ro-tel, but I only had one can, so used stewed tomatoes.

Yields 4~2 cup servings at 1 pt each

1 large bag california style vegetables (carrots, cauliflower & broccoli)
3 cups fat free chicken broth
1 can Ro-tel tomatoes w/green chili's (use Mild if you like)
1 14 oz can stewed tomatoes*
5 ounces lite Velveeta Cheese (loaf type)

Bring first three ingredients to a boil, reduce heat and let simmer for 40 minutes. Stir in cheese until melted. Serve hot.
