Got this last night at our meeting. Sounds good....plus it is easy and quick! A BIG plus for me!!! It may even be Core....I not sure enough on that yet. Enjoy!
I tsp canola oil 1 onion chopped 1 green bell pepper 2 garlic cloves, minced 3 cups reduced sodium chicken broth 14.5 oz can diced tomatoes with mild green chilies 10 oz bag frozen corn kernels 1 tsp chili seasoning mix 1 1/2 cup cooked chicken breast 1/4 cup chopped fresh cilantro or parsley 8 large baked tortilla chips, broken up
Heat oil in large skillet over medium heat. Add onion, bell pepper, and garlic. Cook. Stir frequently until softened (about 5 minutes). Add broth, tomatoes, corn, and chili seasoning. Mix. Bring to a boil over high heat and simmer until heated through (about 2 minutes). Serve with tortilla chips.
Makes 4 servings at 4 pts a serving
One serving=1 1/2 cup soup plus 2 tortilla chips
