3 medium Yukon Gold potatoes, peeled and quartered 3/4 tsp salt 3/4 cup fat free buttermilk 1/2 cup shredded green cabbage ground black pepper to taste
Preheat oven to 350 F. Spray nonstick 8-inch square baking pan with nonstick spray. Place the potatoes, 1/2 tsp of the salt, and enough water to cover the potatoes in a large saucepan. Bring to a boil. Reduce heat and simmer until potatoes are tender, 15-20 minutes. Drain. With a potato masher, puree the potatoes. Add the buttermilk, cabbage, remaining salt, and pepper. Beat well with a spoon until the light and fluffy. Scrape the potato mixture into the 8-inch pan and spread until smooth. Bake until the top is crisp and golden, about 10 minutes.
