*This is a more WW friendly version of my friend Teddy's casserole. This is my family's favorite weeknight meal and my little boy can't get enough of it. They don't even realize that I've lightened it up. If you use regular fat products, the points value is 12. Alot of points...but worth every bite! Thanks Teddybear Colette
Serve with salad and mexican rice for a family pleasing meal.
Ingredients
1 pound raw extra lean ground beef 1 package Taco Seasoning Mix 20 oz canned tomato sauce 2 cup shredded fat-free cheddar cheese 3 cups fat-free canned refried beans 11 oz Doritos Reduced fat nacho cheesier flavored tortilla chips 2 sprays cooking spray
Instructions
Preheat oven to 350*F. Brown ground beef and drain any fat. Add taco seasoning mix and half of the tomato sauce. Heat through. In a 13x9x2" baking dish, crush half of the tortilla chips. Pour beef mixture over chips. Top with half of the cheese. In same skillet, heat refried beans with remaining tomato sauce. Heat through. Top beef and cheese mixture and top with remaining cheese. Spray cooking spray onto cheese to help it melt. Bake for 20 minutes, or until hot and bubbly and cheese is melted. Top with remaining crushed chips and return to oven for 3-5 minutes, do not burn chips.
