This classic French preparation makes an elegant yet easy side dish worthy of being served to guests.
4 medium scallion(s), white parts only, minced 1 head Boston lettuce 1 pound green peas, fresh or frozen 2 tsp mint leaves, chopped 1 Tbsp butter 1/8 Tbsp sugar 1/8 tsp black pepper, or to taste 1/8 tsp table salt, or to taste
Instructions
1. Heat a large saucepan coated with cooking spray over medium heat. Add scallions and lettuce and cook until lettuce is wilted, about 3 minutes, stirring constantly. 2. Add peas and just enough water to cover them. Increase heat to high and cook peas until tender, about 5 minutes (frozen peas will take only 2 to 3 minutes). 3. Drain; add mint, butter, pinch of sugar, salt and pepper to taste. Serve immediately
