Black Bean Salsa
Combine a 15-ounce can black beans, rinsed; 1 c. corn; 1 diced tomato, 1/2 c. chopped cilanatro, 1/2 cup diced red onion; 2 Tbsp lime juice; and 2 tsp olive oil. Add diced bell pepper for crunch, if desired.
