Chicken Dorito Casserole (8 pts) Kid Friendly!


*I recieved this recipe as a young Army bride, many years ago. It's been a family favorite ever since and I just had the idea to run it through the recipe builder at WW.com. It wasn't as scarey as I thought it would be...and it's worth every point! Use reduced fat chicken soup and reduced fat Doritos (if you can find the rf Doritos...I can't) and the points would be a bit lower. My husband is from Texas and his family KNOW TexMex...they all adore this recipe! I hope you try this...it's really delicious! Colette

Chicken Dorito Casserole

I serve this with Lipton's Spanish or Taco Rice and Refried Beans. It's also good served with sour cream and an additional sprinkling of chopped green onion. Be sure to add any extra points.

Ingredients

4 item chicken breast, cooked, skinless
11 oz Doritos Taco Tortilla Chips
6 medium scallion(s)
1 can canned condensed cream of chicken soup
1 cup canned tomatoes with green chilies (Rotel...mild works well but the regular doesn't make it hot)
2 cup fat-free chicken broth
2 cup shredded fat-free cheddar cheese

Instructions

Preheat oven to 350*F.
In a saucepan, combine tomatoes and green chilis, chicken broth and soup. Bring to a boil and reduce heat and simmer about 5 minutes.

While broth is simmering...
Cube cooked chicken breast into bite sized cubes. In a 13x9x2" baking dish, layer 1/3 of crushed Doritos, 1/3 of chicken, 1/3 of chopped scallions, and 1/3 of cheese. Repeat layers until all ingredients are gone, ending with cheese.

Pour soup mixture over casserole. Bake for 30 minutes or until hot and bubbly.
