Community Recipe Swap: Main Meals Hubby Approved Chicken Enchiladas

Ingredients
4 serving Mission Tortillas 2 breast uncooked boneless, skinless chicken breast 4 oz Kraft Natural Cheese Extra Sharp Cheddar Cheese 1 cup canned enchilada sauce 2 tsp olive oil 1/4 cup onion(s) 4 small mushroom(s) 1 cup fat-free chicken broth 1 Tbsp ground oregano 1 leaf bay leaf 2 clove garlic clove(s) 1/2 medium jalapeno pepper(s)
Instructions
Poach chicken breast in chicken stock, add some water and throw in the oregano and bay leaf. Poach for 10min until all white. When chickens done, let sit for a few min and shredd in a bowl with 2 forks. In another pan, sautee onion, garlic and sliced mushrooms and chopped jalapeno. You can add some heat here, like cumin, hot sauce, salt, pepper. Mix mushroom mixture with chicken..add some of the chicken broth and some enchilada sauce to stay moist. On your cooking sheet, lay 4 tortillas...fill mixture up in tortillas, fold and place seam side down....do for other 3. Top with enchilada sauce and shredded cheese. Bake in 300 for 10-15min until cheese is all melted.
Special Notes
I made this with black beans and brown rice on the side with some fresh pico de gallo.
