Ingredients - Cooking spray - 1/2 cup chopped onion - 2 teaspoons bottled or fresh minced garlic - 1 package JENNIE-O TURKEY STORE® Turkey Breast Strips - 1 tablespoon Mexican seasoning or 2 teaspoons chili powder plus 1 teaspoon ground cumin - 1/2 cup salsa - 1 can (16 oz.) black beans, rinsed and drained - 1 cup (4 oz.) shredded low-fat cheddar cheese - 1/2 cup chopped cilantro or sliced green onions - 6 (10 inch) fat-free flour tortillas, warmed
Directions Coat a large non-stick skillet with cooking spray; heat over medium heat. Add onion and garlic; cook 5 minutes, stirring occasionally. Toss turkey with seasoning; add to skillet. Stir-fry 2 minutes. Add salsa and beans; simmer about 6 minutes or until turkey is no longer pink in center, stirring occasionally. Remove from heat; stir in cheese and cilantro. Spoon down center of warm tortillas. Fold bottom of tortilla over filling, fold in sides and roll up. Makes 6 servings.
