Ingredients 2 Tbsp olive oil 1/2 cup scallion(s) 1 cup cooked brown rice 1/2 cup uncooked quinoa 1/2 cup uncooked millet 3 cup vegetable broth 1/4 tsp kosher salt
Instructions
melt butter in a large nonstick skillet over medium heat. add onions; cook 2 minutes. add rice, quinoa, and millet; cook 3 minutes, stirring frequently. stir in broth and salt. bring to a boil; cover, reduce heat, and simmer 25 minutes. yield: 6 servings (serving size: 1 cup).
