Ingredients 1/2 cup scallion(s) 1 Tbsp olive oil 1 cup uncooked brown rice 1/2 cup uncooked bulgur 1/2 cup Quaker Oats Scotch Barley, Regular & Quick Cooking 3 1/2 cup fat-free beef broth 1/2 tsp table salt 1/4 tsp black pepper 1/4 cup parsley
Instructions In a nonstick saucepan, saute onions in oil for 2 minutes. Stir rice, bulgur and barley. Saute for 3 minutes. add broth, salt and pepper. Bring to a boil. Reduce heat. Cover and simmer for 20-25 minutes or until rice is tender. Stir in parsley.
