Ingredients Peanut Sauce: 1/3 cup creamy peanut buter 1/4 cup water 2 tablespoons lite soy sauce 1 tablespoon rice vinegar 1 tablespoon lime juice 1/4 teaspoon red pepper flakes 1 teaspoon sugar Pasta: 8 ounces dry linguini or soba noodles. Vegetables: 2 cups frozen Oriental style vegetables Meat or Tofu: 8 ounces cooked chicken or 8 ounces cooked shrimp or 2 cups cubed tofu Cilantro to garnish
-------------------------------------------------------------------------------- Instructions Preparing the sauce: Mix peanutbutter, water, soy sauce, vinegar, lime juice, red pepper flakes and sugar together in a small sauce pan until warmed through. Preparing the pasta and vegetables: Cook pasta according to package directions. During the last few minutes of cooking, add the frozen vegetables. Drain noodles and vegetables. In a large pan, combine the noodles and veggies with the sauce, toss well, and heat over medium heat until warmed through. To each serving, add 2 ounces chicken, 2 ounces shrimp, or 1/2 cup cubed tofu. Garnish with Cilantro.
